My bubble and squeak recipe for the most delicious way to use up that leftover veg!

Everyone has their Christmas and boxing day traditions, and in our house, we have bubble and squeak for Boxing Day breakfast with eggs. You can imagine my horror when Adam spent the first Christmas with me and hadn’t even heard of bubble and squeak… What Philistine was I dating?!

Anyway, I taught him the ways of the world and we all indulge now. I have a slightly different way of doing things that uses all the leftover veg, not just sprouts and potatoes!

Here’s what to do:

  • 1 onion, finely sliced
  • 1 garlic clove, chopped
  • 15-20 cooked Brussels
  • 3-4 rashers of sliced bacon
  • Any leftover veg – I include red cabbage, swede, carrot… Everything!!
  • 400g cold leftover mashed potato
  • or cold crushed boiled potatoes

Melt fat or oil in a non-stick frying pan, then once it’s hot, add the bacon. As it begins to brown, add the onion and garlic. Next, add the mashed up veg and let it colour slightly. All this will take 5-6 mins.

Next, add the potato. Work everything together in the pan and push it down so that the mixture covers the base of the pan – allow the mixture to catch slightly on the base of the pan before turning it over and doing the same again. It’s the bits of potato that catch in the pan that define the term ‘bubble and squeak’, so be brave and let the mixture colour. Cut into wedges and serve.

It’s super yummy and the perfect recipe for Boxing Day and beyond!

    That’s a great way to use up veg sneakily I wonder if me children would eat it, it’s worth a try. It sounds like it would be delicious with that mix of ingredients. I must give these a go, yum!

    That genuinely sounds delicious! Matt bought a bag of sprouts in the reduced section in asda yesterday so i am sending his ass to the kitchen to make these! Thanks x

    Oh that sounds amazing. I love all things like this!! My mum used to do it with the leftovers from a lamb roast, meat included!
