Meal Plan 7/03

Gosh what a week last week was – I feel like I have to preface this with that statement because I will not be doing a round up of meals. I was poorly on Monday, but then things just got worse – I ended up with a HUGE infection in my nose piercing because of my excessively snotting cold! Cut a long story short, I’m on antibiotics, which give me cracking stomach acid so food has been a bit meh!

So let’s just jump into this week:

Monday :: Mushroom & Artichoke chicken

This looks amazing, but whether or not the kids will like it is another matter. I plan to make the mushrooms suuuuuper finely chopped and go from there. The recipe is from A Saucy Kitchen.

Cottage Pie

I have decided to make a cottage pie for tonight because I won’t be here! I’m off to London (again? Hello return to normality!) and I figured it would make it easier for Adam to have something ready, and then me on Wednesday morning when I’m doing lunch to just chuck the leftovers in their thermos.

Wednesday :: Chicken Fajita stuffed peppers

I think this will be a huge hit with Toby (and probably Reuben too) but I will make a slight variation without the pepper stuffing for Edith! Recipe is from Eating Well.

Thursday :: Tarragon chicken casserole

It’s been a while since I’ve done a casserole like this, and I think it will be a hit. It’s meant to be quite chilly this week and this is a busy night for us, so I can pop this in the slow cooker, get Adam to make the mash potato whilst I take Edith to gym and BOSH. Ready for when we are home. Recipe is from Delicious Mag.

Friday :: Sticky ginger beef

This is one that I think everyone will enjoy (or I hope!) It’s a little bit different, but it sounds really yum and it’s just similar enough to some of our faves that I think the kids will accept it. This recipe is from Hungry Healthy Happy.

Saturday :: Takeaway

Sunday :: Roast dinner

Determined to make this happen.
