Mango & Apricot Chicken – one of those perfect recipes for toddlers (for when you can’t be bothered to cook!)

This recipe is so quick and super tasty – the kids love it, the husband loves it. Win, win I say!

This chicken is a life saver! Not only do the kids love it ( it is one of those perfect recipes for toddlers ), but with a pack of microwave rice (oh get over it) it is done in a matter of minutes! I have to confess, if I have had a really bad night with Toby, which happens more than I care to admit, then I break this out for a quick dinner for everyone and there are never any complaints!

What you need:

  • 2 chicken breasts, sliced into thin strips
  • 1 tsp honey (or if you are making this for an under 2 you can use a touch of maple syrup or sugar)
  • 1 tbsp olive oil

For the sauce:

  • 1 tsbp apricot jam
  • 1tbsp mango chutney
  • 4 tbsp crème fraîche
  • 1 tsp worcestershire sauce
  • 1 tbsp lemon juice

Put the sliced chicken in the honey and set aside. I usually leave this for a time while I go off and do other bits and bobs, but if you are in a jam and just need something quick there is no need to marinade. Heat the oil and fry the chicken until browned (usually 5 minutes depending on how thick you slice the chicken).

Bang all of the sauce ingredients into a pan with 2 tablespoons of water, bring to the boil, add the chicken and simmer for 2 minutes while you cook the rice in the microwave.
