Easy Meatloaf recipe for a tasty dinner.

One thing I’ve never actually tried making before is meatloaf. I’ve never come across a meatloaf recipe and looked at it with “oooh yeah, I need to make that!” eyes. In fact I’ve always thought they sound a bit bland or sticky.

I came up with this recipe and, even if I say so myself, it was delish! The kids absolutely loved it, it was a bit crumbly underneath so if you are finding it’s too (apologies for using this word in advance) moist *shudders* then you will need to add some more breadcrumbs. Don’t add so many that it makes it dry!

  • 500g beef mince meat
  • 100g bread crumbs
  • 1 egg
  • 2tsp mixed herbs
  • 2tsp garlic paste (or you could chop up 2-3 cloves!)
  • 1 onion, grated or finely chopped
  • 1tbsp tomato paste
  • Really good dose of salt and pepper
  • 100g cheddar cheese
  • 250g streaky bacon
  • Butter for basting

Preheat the oven to GM6.

Take your bread pan and grease it with the butter, line the pan by laying the streaky bacon over the side of the bread pan so it covers the bottom and has a bit hanging over. You’re basically wrapping your meat in a parcel. Pop your meat, breadcrumbs, herbs, garlic, grated onion, tomato paste and egg in a bowl and mix, until smooth and combined.

Place half of the mince in the pan on top of the bacon, then add your cheddar cheese, sprinkling over the milk and finally place the rest of the meat over the top and cover with the bacon.

Cover with tinfoil, this should stop your bacon from burning!

Bake for 1hr 30 mins.

Once this is cooked, use two large spoons or spatulas to lift out – don’t make my first mistake and use forks, it broke the bacon and the bottom fell off!

Serve with baby potatoes, carrots and peas with lots of gravy. Yum!

    Great recipe. So simple. Made it tonight and it was super quick. My husband is American but hasn’t eaten meatloaf in 10 years since he’s lived here and he gave it the thumbs up. I made a smaller one with almond flour instead of breadcrumbs for a gluten free guest too and it wasn’t quite as good but it definitely still worked.

    Oh…moist! Haha! Would love to make this for my other half, maybe halving the portion size as I’m a vegetarian so he wouldn’t be able to get through a full one.

    *shock horror* My mummy has never made Meatloaf. I actually though it was a singer! However now we know what goes into it and it’s not just a slab of meat it sounds intriguing. Perfect for this cold weather we’ve had too!

    It is great that you didn’t automatically think of making a meatloaf before but have now found a meatloaf recipe that works for you. It’s great that the kids enjoyed it too.

    My word! This is not a vegan dish is it..lol? I can’t imagine how this must taste! I mean this is meatloaf to the 10th power! This is an easy dish to make. All you need is a green veggie on the side 🙂
