You know when you hear those sweet words ‘Mummy I want bake cake’, do you too feel your waistline automatically bulge in response? Last week Toby wanted to do some baking, but I didn’t really have much in and, after whining all weekend about how rubbish my diet is at the moment and how I’m not getting any slimmer in time for our getaway in November, I really didn’t want to make anything that I knew I would desperately crave.

So we made banoffee pie. I hate bananas, but both Adam and the boys LOVE them, and they all love banoffee pie, so it was a win win situation for everyone. We didn’t make a traditional banoffee pie because Toby waited until 2.40 to announce his culinary desires and we needed to set off on the school run for 3pm. What we made was a dessert cheat, a super quick dessert recipe based on whatever I had going!

Here it is:

  • 2-3 bananas
  • 1 packet Oreos
  • 50g butter
  • 400ml double cream
  • 1 tin of carnations caramel

Blitz the Oreos and butter in a food processor until they make a sand like mixture, then rip it out into a bowl for your child to flatten down to make the base. Next layer your sliced banana circles on the tip of the base, going around in a circle until the last round banana piece in fitted in the middle. Tip out the contents of your carnations caramel and carefully spread over the banana layer. Lastly whip your cream until it is firm, and spread over the top of your pie. You can top the pie with chocolate shavings of you want (we did – Tobes grated the chocolate in between nibbling on the piece I gave him to grate … A word of warning, food in our house is likely to have had sticky fingers in… Or have been licked). Alternatively, you could crush up some nuts and sprinkle on, use a chocolate or caramel sauce over the top or even a few banana pieces if you ave extras left over.

      Thanks Anita – we had a great time doing it, it was really simple and he definitely enjoyed it. Daddy and Reuben enjoyed helping him eat it too! H x
