Extra chocolatey courgette (zucchini) brownies

When it comes to imaginative play, I’m not your gal. I have written before about how it just is not the bread to my butter, but I do love baking with the kids. I think it could well be one of my favourite things to do, top trumping hide and seek (which I’m a freakin Jedi at) and long family walks. Yup, I love to bake.
So with Mother’s day looming and I figured I would share a recipe that I have come to really love baking with my kiddos. It’s delicious, sneaks a veggie in AND it’s packed with chocolate: courgette brownies. I started off with one recipe that I found online that seemed ok, but it wasn’t quite gooey enough. I want stick to the roof of your mouth goodness. This wasn’t it. So once those were done we decided to make another recipe – this one had a lush topping and was a bit gooier but the combination of nuts and cocoa powder instead of *actual* chocolate didn’t so it for me.

We combined recipes, added extras and came up with the PERFECT ooey-gooey, stick to the roof of your mouth, packed with chocolate (and a hidden veggie) recipe that we all loved. Bosh.

300g courgette (or zucchini to my state side pals)
150g butter
200g dark, high quality chocolate
200g light brown sugar
3 large eggs
1 tsp vanilla extract
150g plain flour
2tsp baking powder
Pinch of salt
150g of milk and white chocolate chips
Ganache Topping:
400g milk chocolate
200ml double cream

Pre heat your oven to GM4.

Start off by pealing and grating your courgette, then placing it in a clean tea towel and draining off excess fluid. Melt your butter in a saucepan on a low heat and add your chocolate and sugar, stirring until melted. Take off the heat and allow to cool slightly, add your vanilla extract then beat in one egg, a table spoon of your flour and then an additional two eggs and the rest of your flour until smooth. Add the baking powder and pinch of salt, finally stirring in your courgettes. Add in your chips and stir. Finally pour into a greased baking tray and bake for 30mins.
Whilst that is getting it’s bake on, make the rather nomilicious ganache. Heat your cream in a pan then add your chocolate, stirring until smooth.

Take off the heat and allow to cool. This should be thick enough that it pours but not so thick that it hardens.
Once the brownies are cooked, take them out of the oven and allow to cool on a cool in their tray. Once cool, pour over the ganache and allow to set. You can do this on the side or in the fridge.
Slice and remove one by one. Or should I say slice and remove to eat.

    Who knew that you could make chocolate brownies using zucchini as the main ingredient! I am impressed by that, especially that it is so healthy. I will definitely try this recipe, as I love gooey brownies.
